Vegans Challenge Culinary Students

Students Stephanie Hanscon and Charles Hernandez prepare vegan dessert.
Grossmont College’s Earth Club, in an effort to promote awareness about the benefits of Vegan diets, initiated a Vegan Cook-off. They challenged Culinary Arts Chef Joe Orate and his intermediate culinary class to prepare alternative Thanksgiving themed dishes without using animal products. The event was held just prior to the Thanksgiving holiday.

Marcella Maxwell, president of Earth Club, chaired the event. With the help of Kate Thom, student affairs, Maxwell invited several campus clubs, staff, administrators and the culinary arts department to participate in the event. The event’s focus was to demonstrate to the audience that plant-based diets can by tasty while creating significantly less environmental impact.

More than 30 students from the Culinary Arts class, as well Chef Joe Orate and his son, formed six teams that participated in a judged competition for Best Appetizer, Best Entrée, Best Dessert, and Best Overall Thanksgiving meal. They prepared appetizers, entrees, and desserts without using any animal products.

Juliette Harrington of Health Services decorated the Griffin Gate with a Thanksgiving motif, and Luz Sanchez of Aztec Shops provided refreshments for a revolving crowd of about 30 spectators. Karin, Travis, and Derek Trio of the Melodia Club provided musical entertainment.

Judges included, from left, Jack Peters, Fred Allen and Jim Fenningham.

Fred Allen, senior dean of Business and Professional Studies, Jim Fenningham, dean of Counseling/Student Development & Matriculation, Jack Peters, assistant dean of Student Affairs, Sylvia Montejano, EOPS counselor, and Janet Arnold, community representative, served as judges for the event.

Chef Joe Orate and his son, Joe Jr., nearly swept the event with Best Appetizer, Best Dessert, and 1st Overall.

The Earth Club awarded cash prizes and solicited gift prizes from Trader Joes, All Vegan, the Reuben H. Fleet Science Center, the San Diego Natural History Museum, the San Diego Museum of Man, the San Diego Historical Society, and Boomers.

Pleased with the event’s reception, the club plans to sponsor a Vegan Picnic Competition next spring.
